Start by roughly chopping fresh spinach and draining and dicing artichoke hearts. Set those aside so they’re ready when the chicken is browned.

Set the Instant Pot to SAUTÉ and drizzle in a little olive oil. Add the diced chicken and brown it for 2–3 minutes, turning so pieces develop a light sear. Browning locks in flavor and shortens final cooking time.

Stir in the diced artichokes and season with garlic powder, onion powder, salt and pepper. Continue to sauté for another 2–3 minutes to warm the artichoke and release flavors.
