When a recipe becomes one we make repeatedly at home, you can trust it’s truly worth making. This chicken dinner is exactly that—reliable, tasty, and effortless.
We’ve adapted this dish many ways over the years—using chicken legs, a whole chicken, different vegetables, or seasonal herbs. My favorite version uses boneless, skinless chicken thighs and fresh rosemary. Thighs stay moist in the slow cooker and have enough natural richness to create a flavorful broth that the vegetables absorb.
This is a dump-and-go recipe: layer the vegetables, add seasoning and a little liquid, top with chicken and herbs, cover, and let the slow cooker do the work. The chicken juices mingle with the sherry or broth, producing a savory broth that cooks the vegetables until tender and flavorful.
What You’ll Need to Make Slow Cooker One Pot Chicken Dinner

Ingredients:
- Red potatoes (6–10, halved if large)
- Baby carrots (1 small bag)
- Sweet onions (2, quartered)
- Sherry or chicken broth (1/2 cup)
- Salt, pepper, and poultry seasoning, to taste
- Boneless chicken thighs (about 3½ lbs)
- Fresh rosemary or thyme (4 sprigs)
How to Make Slow Cooker One Pot Chicken Dinner

- Place the red potatoes on the bottom of the slow cooker. Keep them whole if they’re small; cut larger potatoes in half.
- Top the potatoes with the baby carrots, spreading them in an even layer.
- Add the quartered sweet onions over the carrots and potatoes.
- Season the vegetables with salt, pepper, and a light sprinkle of poultry seasoning. Pour the sherry or broth evenly over the vegetables to provide moisture.
- Arrange the boneless chicken thighs on top of the bed of vegetables. Season the chicken with salt, pepper, and more poultry seasoning as desired.
- Place sprigs of fresh rosemary or thyme over the chicken for aromatic flavor.
- Cover the slow cooker and cook on low for 5–8 hours, until the chicken is cooked through and the vegetables are tender. If you prefer a slightly shorter cook time, check for doneness after 4 hours.

Tip: For versions made with skin-on chicken or a whole roasted bird, you can remove the cooked chicken and briefly broil it in the oven for a couple of minutes to crisp the skin. Watch closely to prevent burning.
