S’mores Popsicles

- 1 tsp pure vanilla extract
- Tiny pinch of salt

- Optional: crumbled graham crackers, using gluten-free graham crackers if needed
Instructions
Combine the milk, marshmallow crème, vanilla extract, and salt in a microwave-safe dish. If you prefer not to use a microwave, add the same ingredients to a small saucepan instead. Warm the mixture for about 1 minute in the microwave, or heat gently on the stove just until the marshmallow crème softens enough to stir smoothly into the milk.
Stir very well, making sure there are no lumps. The mixture should look creamy and evenly combined. Pour it into paper cups or popsicle molds, then add popsicle sticks if your molds require them. Freeze until firm. The exact freezing time will depend on the size of your molds, but the pops should be completely solid before you add the topping.
Once frozen, remove the popsicles from the molds. If desired, dip each pop into melted chocolate or a quick-hardening chocolate coating. While the chocolate is still wet, sprinkle with crumbled graham crackers. If you are using a chocolate shell that hardens quickly, add the graham cracker crumbs right away so they stick before the coating sets.
