Ingredients

  • 1 ½ cups brown rice, uncooked
  • 2 cups romaine lettuce, chopped
  • 1 can black beans (15.25 oz), drained and rinsed
  • 1 can sweet whole kernel corn (15.25 oz), drained
  • 1 large tomato, diced

Light Tomatillo Dressing

  • 2 cups Greek yogurt
  • ¼ bunch cilantro, leaves picked and stems discarded
  • 1 tomatillo, husk removed and cut into chunks
  • ¼ teaspoon minced garlic
  • ½ jalapeño, seeds removed (adjust for heat preference)
  • Juice of 1 lime
  • ½ teaspoon salt
  • 1 green onion, use all of the green part

Instructions

  1. Cook the brown rice according to package directions. Fluff and keep warm.
  2. Divide the rice among serving bowls. Top each portion with chopped romaine lettuce, black beans, corn, and diced tomato.
