My Love for Homemade Bread
I love baking bread at home. Over the years I’ve experimented with many recipes, from yeast breads to quick breads, and I enjoy the variety and the process. While yeast breads are rewarding, quick breads are the perfect solution for busy days when you want a loaf without waiting for rises. This almond flour quick bread is one of my favorites for its simplicity and reliable results.
Quick Bread for an Easy Loaf Anytime
Baking with yeast is relaxing, but sometimes you don’t have yeast or time. Quick breads use baking powder for leavening and come together fast. This almond flour bread needs only about ten minutes of hands-on work, then 40–45 minutes in the oven. It’s a dependable, no-fuss loaf you can make any day of the week.

The Best Low Carb Bread
This almond flour bread is a great low-carb alternative to conventional bread. It’s especially helpful for people managing blood sugar or following low-carb, paleo, or gluten-free diets. The texture is soft and slightly cake-like — much more enjoyable than the dry, dense loaves many people expect from grain-free recipes.
Why This Recipe Works:
- Simple Ingredients: All ingredients are easy to find at most grocery stores; nothing exotic is needed.
- Fast and Easy: No yeast, kneading, or rising. About 10 minutes of prep and the oven does the rest — a full loaf in roughly 50 minutes.
- Low Carb & Protein-Rich: A base of almond flour and unsweetened shredded coconut keeps carbs low and protein higher than a typical wheat loaf. Eggs add structure and satiety.
- Tender, Moist and Fluffy: Eggs and the right liquid balance give this loaf a soft, moist crumb and tender bite instead of a dry, crumbly texture.
- Diet-Friendly: Naturally gluten-free, dairy-free and suitable for Paleo. Omit the honey to make it Whole30 compliant.

Ingredient Notes and Substitutes:
- Coconut Oil: Refined coconut oil has a neutral flavor; extra virgin coconut oil will lend a coconut aroma. You can also use neutral vegetable oil, avocado oil, or melted butter/ghee if dairy is tolerated.
- Honey: A small amount adds mild sweetness. Use maple syrup, agave, or omit entirely if you prefer no sweetener.
- Apple Cider Vinegar: Reacts with baking powder to give extra rise. White wine vinegar works as a substitute.
- Eggs: Eggs are important for structure and rise. If reducing yolks, replace with additional whites; partially replacing several eggs with aquafaba or a commercial egg replacer may work but can alter texture.
- Shredded Coconut: Use unsweetened shredded coconut, preferably finely shredded. If using coconut flour instead, reduce the quantity since coconut flour absorbs more moisture.
- Almond Flour: Blanched almond flour produces a lighter color and finer crumb. Almond meal can be used but will produce a slightly darker, coarser loaf.
- Baking Powder: The only leavening agent here; make sure it’s fresh. If gluten is a concern, use certified gluten-free baking powder.
No Almond Flour? Make Almond Meal in 5 Minutes
If you don’t have almond flour, you can make almond meal at home by pulsing whole almonds in a food processor or high-speed blender until finely ground. Sift if you want a finer texture. Homemade almond meal is an economical and effective substitute.

How to Make Almond Flour Bread (Step by Step):
1. Preheat and Grease
Preheat the oven to 300°F (150°C). Position the rack in the middle and grease an 8″ x 4″ loaf pan, or line it with parchment for easy removal.

2. Whisk Oil, Honey and Vinegar
In a large bowl, whisk melted coconut oil with honey and apple cider vinegar until combined.

3. Add Eggs
Add the beaten eggs and whisk until the mixture is smooth and uniform.

4. Prepare Batter
Stir in the dry ingredients — unsweetened shredded coconut, almond flour (or almond meal), salt and baking powder — until a liquid batter forms. The batter will be thinner than traditional bread dough; that’s normal.

5. Transfer Batter to Pan and Bake
Pour the batter into the prepared loaf pan and bake for 40–45 minutes, until the top is golden and a toothpick inserted in the center comes out clean.

6. Let Cool
Cool the loaf in the pan for 10–15 minutes, then run a knife around the edges and remove. Allow the bread to cool completely on a wire rack before slicing to preserve texture.

7. Slice and Enjoy!
Slice the cooled loaf and serve. The bread is excellent toasted, spread with nut butter, or used for sandwiches.

Tips and Variations
- Use a metal loaf pan: Metal helps the loaf brown evenly on all sides. Glass or ceramic can leave the bottom and sides less crisp.
- Make buns: Divide the batter into a standard muffin tin for individual buns; reduce bake time to about 20–25 minutes at the same temperature.
- Add-ins: Stir in chopped nuts, seeds, dried fruit, or sugar-free chocolate chips for variety.
- Almond meal: If making your own almond meal, pulse whole almonds until finely ground for an economical alternative to store-bought almond flour.
