I use a honey granule product for convenience: it blends honey flavor with cane sugar so you get the taste of honey without the stickiness. Honey granules work well in beverages and baked goods and are an easy way to introduce honey flavor into recipes that otherwise call for granulated sugar.


Honey granules are versatile: in baked goods they can replace some or all of the granulated sugar called for in a recipe, adding a subtle honey note. As a conversion guideline, one common approach is to substitute 1 cup liquid honey with 1 cup honey granules plus about 1/4 cup additional liquid to the recipe to account for honey’s moisture.

- 8 tbsp unsalted butter, softened
- ½ cup honey (or honey granules as preferred)
- ½ tsp nutmeg
- 1½ ounces spiced rum per serving
- ¾ cup boiling water per serving
Instructions
- In a small bowl, beat together the softened butter, honey (or honey granules), cinnamon and nutmeg until well combined. Pack this butter mixture into a small bowl or container and refrigerate until firm.
- For one serving, place 2 tablespoons of the chilled honey-spice butter in a coffee mug or teacup, add 1½ ounces spiced rum, and pour ¾ cup boiling water over the mixture. Stir thoroughly until the butter has melted and the drink is smooth and fragrant. Serve immediately.
