Ingredients

  • 1 can full-fat coconut milk
  • 1 ripe banana (the riper the better)
  • 1 cup strawberries (fresh or frozen)
  • 2 tablespoons honey, or more to taste
  • 1/2 cup mini chocolate chips (or more), divided

Instructions

  1. Place half of the chocolate chips into a blender along with the coconut milk, banana, strawberries, and honey. Blend until completely smooth and creamy.
  2. Prepare your popsicle molds by adding about one teaspoon of chocolate chips into the bottom of each mold. This creates small pockets of chocolate that add texture when frozen.
  3. Pour the blended banana-split mixture into each mold, filling most of the way. Top each mold with a few more chocolate chips if you like, then insert popsicle sticks or the mold tops.
  4. Freeze for about 3 to 4 hours, or until completely firm. For best texture, let the popsicles sit at room temperature for a minute or two before unmolding.

  • To make these nut-free and dairy-free, use full-fat coconut milk as listed. If you prefer a lighter option, try a lighter coconut milk or a non-dairy milk blend, but texture may be less creamy.
  • If your strawberries are frozen, allow them to thaw slightly before blending for an easier process. Using frozen fruit can make the mixture thicker and sometimes quicker to freeze into popsicles.
  • Adjust the sweetness to taste. Ripe bananas add natural sweetness, so start with 2 tablespoons of honey and add more only if needed.
  • For a layered look, pour a thin layer of the blended mixture into molds and freeze briefly before adding more mixture and chocolate chips. This creates distinct layers of flavor and texture.
  • To unmold easily, run warm water over the outside of the molds for a few seconds, then gently pull on the sticks.
